The Biohacking Epicure
My Epicurean Odyssey

I LOVE FOOD. I love everything about food. I love cooking food, eating food, looking at food being made, looking at food pictures, plating food. Food is my PASSION. Hence, even though I eat healthy, I never compromise on flavour. I don't mean to brag, but it is a fact when I say that I am a pretty good cook. One look at my instagram page - "Dolce Vita with Anusha" (named so, because I love Italian food and the simplicity of the cuisine) should be enough to understand how passionate I am about food. I love experimenting with new ingredients, flavours and cuisines. Whenever I am cooking I focus on the quality of the ingredients. I have realized one thing - if the quality of the products is optimal, the flavour is optimal and the amount of efforts or additions that one needs to make to the products is minimal. Hence, I focus on buying organic, locally grown produce to ensure optimal quality, freshness and flavour alongwith optimal nutrition.

My diet consists of a lot of vegetables, meat, goat milk dairy products, and whole grains. I stay away from processed sugar as my biohacking tools and research has revealed that sugar is not particularly healthy for me. I rarely buy prepared/packed products from grocery stores because of unwanted and unnecessary added ingredients like sugar, emulsifiers, inflammatory oils, etc. I have one rule during grocery shopping - if the ingredient list contains things that do not belong in the product or if the ingredient list is so long that you can't read it, I don't buy the product. Preparing meals is time consuming, but it is a form of artistic expression for me and the joy I get from every minute spent in the kitchen is equivalent to the benefit I get from every minute spent meditating.

Majority of my meals are homecooked, but I love dining in restaurants and trying out different restaurants. I love the way I get to interact with the food being served, I love the creativity of chefs and I love seeing the passion for food being reflected through the chefs' dishes. I am also mindblown by the concept of wine-pairing and would one day love to learn more about it and possibly do a sommelier course.

I have very strong feelings when it comes to the concept of "cheat meal". What are you cheating on? I love indulging in junk food and I do not consider consuming junk food, consuming sugar, going over the calorie limit, going to a restaurant or consuming alcohol as "cheating". I am well aware of my health goals, my habits and lifestyle are flexible to accomodate small periods of "fun". When I am on a vacation, I am aware that I cannot be in control of everything I am consuming and I want to try things which I might not get in normal circumstances. I believe in enjoying oneself in moderation. Being healthy majority of the times helps blunting the ill effects that an "unhealthy" meal might have. I am not on a "diet". This is my lifestyle. I am not doing this for a short period of time. My lifestyle is something that I plan on following for a long time, and tweaking it as and when I find it necessary to suit my body's needs. My lifestyle is sustainable for me. Hence, I just focus on enjoying food and reaping its nutritional benefits.
Dolce Vita with Anusha

"El tiempo se detiene para dejarte saborear cada plato. Sabor y saber, las dos tienen el origen en la misma palabra. Cocinar, compartir, transmitir. Descifrar recetas y transformarlas hasta dar con lo importante: el ingrediente esencial. " --> "The time stops to allow you to savour each dish. Flavour and knowledge have origin in the same word. Cook, share, transmit. Decipher recipes and transform them until you hit the important: the special ingredient/special something."
La Cocinera de Castamar, Netflix Series
I am fluent in Spanish and I am not ashamed to say that I owe a majority of my spanish linguistic abilities to Spanish series and telenovelas. "La Cocinera de Castamar" was one such series and while watching it, I heard this dialogue. The food lover and the cook in me held on tight to these words. Hence, I felt it necessary to include this quote on my food related webpage.
